I love Maple syrup. When I was young, my grandfather would make maple syrup and we would go out and help. There would be buckets on all the trees. The maple sap is light and only slightly sweet, and it pours out of the trees faster than you would imagine. And cooking it down is a long, hot process. If your interested, you can find out how it's made (although it's not how we did it with Grandpa) or how the natives did it (which is a lot closer to the way we did it).

I also have a recipe from Maple Syrup Rolls, which are the Best Sweet Rolls Ever(TM). I will post it to here and tastebuds, but the recipe is at my mom's... so it ain't gonna happen tonight.
